This recipe requires the use of a pressure cooker to rapidly cook the meat and rice while keeping the moisture in. Mix: 1-1/2 lbs Ground Beef 3/4 Cup of Rice ( recommend Nishiki brand or equivilent premium grade rice) 1 scant tsp salt ground pepper to taste 1/4 fine chopped onions In pressure cooker place: 1 can tomato soup 1 – 5oz can V-8 vegtable juice 3 cups water 1/2 cup milk 1/2 tsp salt After meatballs are formed and placed in liquid of pressure cooker, add: 1 heaping cup of rice Mix meat, rice, salt, pepper and onions and form into balls. Drop into hot soup mixture. When meatballs are all in cooker, ad the heaping cup of rice and close lid. Cook at 15lbs pressure for 10 minutes. Then allow cooker to slowly return to zero pressure before opening lid. |
