3 cups sugar 1 cup corn oil 4 eggs, beaten 1 (16-ounce) can pumpkin 3-1/2 cups flour (substitute whole wheat super flour instead) 2 tsp baking soda 2 tsp salt ( I usually skip) 1 tsp baking powder 1 tsp nutmeg 1 tsp cinnamon 1 tsp allspice 1/2 tsp ground cloves 2/3 cup water (don't forget the water) Combine sugar, corn oil and eggs in bowl and mix well. Stir in pumpkin until blended. Sift flour, baking soda, salt, baking powder, nutmeg, cinnamon, allspice and cloves together. Add to the pumpkin mixture and mix well. Stir in water. Spoon into 8 greased miniature loaf pans or 2 greased 5x9-inch loaf pans. Bake at 350 degrees for 1 hour or until loaves test done. I really like this recipe because it uses the whole can of pumpkin and its very good also especially with lots of butter smeared all over every bite! Enjoy! |
