I'll tell you: Rolling out of bed with all those symptoms, and then trying to conquer your current programming project. Like all brothy noodle soups, this one's warm and comforting as it goes down. But that's not all -- Eastern medicine teaches that shitake mushrooms and scallions are top immune-boosting ingredients. Ginger and chili flakes help clear sinuses and bronchial congestion while soothing aches and pains. Snow peas, loaded with vitamines and iron, nourish your entire body. This soup contains all that good stuff, and it takes just 15 minutes to prepare! Slurp it up, rest your weary body, and get back to work! 2 cups sliced shitake mushrooms 1 cup thin sliced scallions (use green onions if you must) 2 tablespoons minced fresh ginger 1/4 teaspoon red chili flakes 4 cups canned chicken broth 2 cups water with 2 cubes chicken bullion 2 cups snow peas, cut diagonally into 3/4 inch pieces 1 lb medium shrimp, peeled and deveined 1 lb cooked Asian noodles (linguini will do) Combine shitake mushrooms, scallions, ginger, chili flakes, and broth in a large saucepot. Place over high heat and bring to a boil, then turn down to low and simmer for 8 minutes. Turn temperature up to a boil and stir in shrimp and snow peas. Cook for 2 to 3 minutes, until shrimp are pink and peas are bright green. Drop in cooked noodles and serve immediately. Serves 6-8. |
